Ants on a Stick


Ingredients:
  • celery
  • peanut butter
  • raisins
  • chocolate chips
Preparation:
Wash celery, and trim the ends. Spread peanut butter into the celery groove. Top with raisins and/or chocolate chips.

Dogs in Sleeping Bags


This makes a nice lunch, and kids will enjoy helping prepare and cook it. Refrigerated bread or pizza dough is available in most supermarket bakery sections, or you can make your own with a breadmaker. I used a whole wheat recipe, but feel free to experiment with your own favorite. Since the cooking times over coals can vary so much, it may be wise to check after about 20 minutes. When the buns are golden brown, they're done.
INGREDIENTS:
  • 6 large-size wieners
  • 1 package (small loaf size) bread dough
  • 3 slices of cheese
PREPARATION:
Pinch off a ball of bread dough about the size of a small apple and flatten inside a folded sheet of aluminum foil until it is longer than the wiener and approximately 6 times as wide. It helps if you coat the ball with a little margarine first.
Place a wiener at one edge and add half a slice of cheese.

Campfire Comfort Chicken

This recipe will make anyone enjoy the comfort of a warm fire, and help bring a family together.

INGREDIENTS:

  • 15-20 chicken wings
  • Mrs. Dash Garlic and Herb Seasoning
  • heavy duty aluminum foil

PREPARATION:

Fold aluminum foil to make a large pocket for the grill. Place chicken wings on foil and sprinkle Mrs. Dash on chicken. Cover with foil and cook at least one hour, or until chicken is lightly crispy. When done, unfold aluminum foil and enjoy the chicken at the campfire.

Beef Stew
I always take my Dutch oven along. We love the beef stew. I keep my Dutch oven greased in between cookings to keep it from rusting. It also maintains a slick interior, and the stew never sticks to the oven.

INGREDIENTS:

  • 1-2 pounds stew meat
  • 6 potatoes, cut into chunks
  • 1 cup baby carrots
  • 1 cup celery in 1 inch pieces
  • 1 onion
  • 1 package McCormicks beef stew mix
  • 1 package McCormicks beef and herb gravy mix
  • salt and pepper, to taste
  • water

PREPARATION:

I use a 6-quart Dutch oven over ready hot coals. Put the beef in enough water to cover the meat, and put the lid on the Dutch oven and cook until the beef is tender. Add potatoes, carrots, celery, and onion, and cook until potatoes and carrots are tender.

Last put in the gravy mixes and stir until mixed well. You may want to add more water if desired. Simmer for about ten minutes. Take Dutch oven off of coals and serve.Servings: 6-8

Hillbilly Hash

A great Idea for breakfast
This is so easy to make, and you can add whatever you want, and clean up is easy.
INGREDIENTS:

    * 1 bag shredded hash brown
    * 6 eggs
    * 1 lb sausage or ham, cooked
    * 1 medium onion, chopped
    * 2 cups shredded sharp cheese
    * seasoning salt and pepper
    * red, yellow, or green peppers, optional

PREPARATION:
Take an aluminum foil cooking bag sprayed with pam, sprinkle with seasoning salt and put some pats
of butter in the foil bag. Open a bag of hash browns, beat eggs, chop onions, pour all ingredients into
the bag of hash browns, and mix by squeezing.Then pour the mixture into the foil cooking bag and
spread out. Add some salt and pepper, more seasoning salt, and a bit more butter on top of the hash
brown mixture. Place the aluminum cooking bag on a preheated grill (medium heat) and turn the bag
every five minutes. The bag will start to puff and you can open it to check for doneness.

For this recipe you'll need a two-burner camp stove and two skillets. So you can just as easily make this at home. It's amazing how something so simple to make can taste so good.
INGREDIENTS:

* 1 pound sirloin steak
* 1 large onion, sliced
* 1 jar Cheez Wiz
* 4 hoagy buns
* vegetable oil
* salt and pepper, to taste

PREPARATION:
Slice steak into 1/8 inch strips. Heat two 12-inch skillets. Add about 2 tablespoons of vegetable oil to each skillet. Cook steaks in one skillet to desired doneness. Cook sliced onions in the other skillet until translucent.

Spread some Cheez Wiz on a bun, place some steak on next, then add some onions, salt and pepper, and finish with some more Cheez Wiz on top.
Servings: 4

Can't Get E'nuffs
A camping recipe from Beth.
I ran out of graham crackers for S'mores, and decided upon this concoction. Well, my family liked them just as much, if not better. You know you can't go wrong with chocolate and peanut butter.
INGREDIENTS:

* coconut cookie bars
* peanut butter
* chocolate bars (i.e. Hershey's brand)
* roasted marshmallows or marshmallow crème

PREPARATION:
Spread peanut butter on a coconut cookie bar. Place piece of chocolate bar on top of peanut butter. Place roasted marshmallow or spread marshmallow crème on top of chocolate bar, and top with a coconut cookie bar.

Similar to S'mores, but these are "Can't get e'nuffs!"

Fry Bread

A cast-iron skillet and a campfire, grill or stove is all you need to make delicious fry bread.
INGREDIENTS:
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 tablespoon sugar
  • 1/2 cup water
  • vegetable oil
PREPARATION:
Mix all ingredients in a large bowl, cover and let set for about an hour. Preheat your cast-iron skillet with about 1/4 inch oil. Divide dough into four pieces, pat each piece to about 1/4 inch thickness, and fry on first side for 3-5 minutes, or until golden brown.

Variations: - serve plain as bread to accompany a meal. Top it with chili, cheese, lettuce and tomato for an Indian taco. Sprinkle with powdered sugar for a sweet treat. Drizzle with honey and sprinkle with crushed pecans for a breakfast roll.
